Ingredients
  

For the Salmon:

  • 2 salmon fillets (about 150 grams each)
  • 1 tablespoon XO sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon honey (or maple syrup)
  • 1 tablespoon sesame oil
  • 1 teaspoon freshly grated ginger
  • 1 teaspoon freshly minced garlic
  • 1 teaspoon lime juice

For the Mango Salsa:

  • 225 grams fresh, ripe mango
  • ¼ red bell pepper
  • ½ red onion
  • A small bunch fresh cilantro
  • 1 teaspoon lime juice (to taste)
  • ½ teaspoon fish sauce optional
  • 1 small red chili optional, for heat

Instructions
 

  • Prepare the Ingredients:
    Dice the mango, red onion, and red bell pepper. Roughly chop the cilantro, and finely slice the Thai chili if using.
    In a mixing bowl, combine the diced mango, red onion, bell pepper, Thai chili, lime juice, fish sauce, and cilantro. Gently toss until well combined, then set aside to allow the flavours to meld.
    In a small mixing bowl, combine the sauce ingredients and whisk until well-combined and the honey has fully dissolved. Set aside.
    Pat the salmon fillets dry with paper towel, then lightly season with salt and white pepper.
  • Cook:
    Heat a non-stick pan over medium heat and add a small amount of oil. Once hot, place the salmon skin-side down and cook for 4-5 minutes, until the skin is golden and crispy.
    Carefully flip the salmon and cook for another 2-3 minutes, or until it reaches your preferred doneness.
    Reduce the heat slightly. Spoon the prepared XO glaze over the salmon and allow it to bubble gently for about 1 minute. Continuously baste the salmon with the sauce as it caramelizes.
  • Serve:
    Serve the XO-glazed salmon over fluffy jasmine rice. Spoon a generous amount of mango salsa over the salmon or alongside it, then garnish with toasted sesame seeds.
    For maximum flavour, drizzle any remaining caramelized XO sauce from the pan over the salmon before serving.
