This umami-packed recipe combines crispy salmon fillets with silky noodles tossed in garlic oil and finished with a savoury XO sauce. Make the Salmon Marinade:In a small bowl, mix together 1 tablespoon XO sauce, 1 teaspoon soy sauce, 1 teaspoon honey, 1 teaspoon sesame oil, and 1 teaspoon rice vinegar.Coat the salmon fillets evenly with this marinade and set aside for 15 minutes while you prepare the other elements.
Prepare Garlic Oil:Heat 2 tablespoons neutral oil in a small skillet over medium-low heat.Add 1 tablespoon minced garlic and sauté until golden and fragrant.Turn off the heat and let the garlic oil cool slightly to prevent burning.
Cook Noodles:Boil the noodles according to the packet instructions. Drain well.Pour the cooled garlic oil over the noodles and gently toss to coat. This keeps them from sticking and adds rich aroma.
Make XO Noodle Sauce:In a bowl, whisk together 1 tablespoon XO sauce, 1 tablespoon soy sauce, 1 teaspoon sesame oil, and 1 teaspoon rice vinegar.Add half of this sauce to the garlic-oil-coated noodles and toss well so the flavour absorbs evenly.
Cook the Salmon:Heat a non-stick pan over medium heat.Place the marinated salmon fillets skin-side down and cook for 3–4 minutes, until the skin is crispy.Flip and cook another 3 minutes, or until just cooked through.
Assemble the Dish:Place the noodles on a plate or bowl.Lay the salmon fillets on top.Pour the remaining half of the XO noodle sauce over the salmon.
Garnish & Serve:Finish with sliced spring onions, toasted sesame seeds, fresh coriander, and a squeeze of lime. Serve immediately while hot.
