Equipment

  • 1 oven

Ingredients

For the Cod:

  • 4 cod fillets about 150-180 grams each
  • 2 green onions thinly sliced
  • 1 tablespoon toasted sesame seeds

For the Ginger Soy Glaze:

  • ¼ cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon freshly grated ginger
  • ½ tablespoon freshly minced garlic
  • 1 tablespoon sesame oil

Instructions

  • Prepare the ginger soy glaze: In a small bowl, whisk together the soy sauce, honey, rice vinegar, grated ginger, minced garlic, and sesame oil. Set aside a little glaze in a separate bowl for serving, before any comes into contact with the raw fish.
  • Preheat the oven: Heat your oven to 400°F (200°C). Prepare a baking sheet for the fish.
  • Coat the cod: Pat the fillets dry with paper towel, then place them on the prepared baking sheet. For skin-on fillets, place them skin-side down. Brush the exposed flesh generously with the glaze.
  • Bake and broil: Bake for 9 minutes, then switch to broil for 2–3 minutes. Watch closely to prevent the glaze from burning. Cooking time varies with the thickness of the fillets; the fish should reach an internal temperature of 145°F (63°C).
  • Garnish: Transfer the cod to a serving dish and spoon the reserved glaze over the top. Sprinkle with toasted sesame seeds, sliced green onions, and sliced Thai chilies, if desired.
  • Serve: Enjoy with steamed rice and vegetables such as bok choy or broccolini.
