Ingredients
  

  • 900 grams chicken (skinless and deboned, cleaned)

Marinade:

  • 3 tablespoons oyster sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons honey
  • ½ teaspoon MSG
  • 1 teaspoon ground black pepper
  • 1 tablespoon lemongrass paste
  • 2 tablespoons minced lemongrass
  • 1 tablespoon minced shallot
  • 1 tablespoon minced garlic

Instructions
 

  • Prepare:
    In a mixing bowl, combine all the marinade ingredients. Add the chicken, mix well to ensure each piece is thoroughly coated, and marinate in the fridge for at least 3 hours. For the best flavour, marinate the chicken overnight.
  • Cook:
    Preheat your grill to approximately 400°F (200°C). Grill the chicken, flipping occasionally, until it is cooked through and has a nice char on both sides. Ensure the internal temperature reaches 165°F (74°C) for safety.
    Remove the chicken from the grill and let it rest for about 5 minutes before slicing. This helps to keep the chicken juicy.
  • Serve:
    Transfer the sliced grilled chicken to a serving plate. Serve hot with rice or vermicelli noodles. Enjoy!
