Ingredients
  

  • 425 grams winter bamboo shoots
  • 165 grams pork belly
  • 65 grams shiitake mushrooms
  • 8 grams freshly minced garlic
  • 8 grams freshly minced ginger
  • 1 green onion finely chopped (white and green parts separated)
  • 1 Thai chili finely chopped (optional)

For seasoning:

  • Dark soy sauce, salt, mushroom powder, ground white pepper, sesame oil

Instructions
 

  • Prepare the Ingredients:
    Thinly slice the bamboo shoots, shiitake mushrooms, and pork belly.
    In a mixing bowl, combine the pork belly with ½ tablespoon of dark soy sauce, 1 teaspoon of mushroom powder, ¼ teaspoon of salt, ¼ teaspoon of ground white pepper, and the white part of the green onion. Mix well and marinate for 10 minutes.
    Bring a pot of water to a boil. Add the bamboo shoot slices and blanch for 2 minutes to remove bitterness and impurities. Drain well and set aside.
  • Cook:
    Heat a drizzle of cooking oil in a medium non-stick skillet over medium heat.
    Add the minced garlic, ginger, and Thai chili (if using). Sauté until fragrant, about 30 seconds.
